Stress Therapy: Chocolate White Chocolate Chunk Cookies

This week has been rough…finishing all the last minute assignments (or at least the assignments I waited to do until last minute) only to start cramming for finals this weekend has made it a stressful week. By the end of a school semester everyone is so burnt out and ready to be done but the last stretch is usually one of the most important times. Yikes! Why can’t midterms be more important? I am full motivation up until a little after midterms…then my thoughts start to sway from school and into SUMMER.

My stress therapy was making one of my VERY favorite cookie recipes…chocolate white chocolate chunk cookies. I love many types of cookies but these are constantly my fall back recipe. These cookies are absolutely divine. Alright maybe I am being a little extreme about these cookies but you will have to make them to find out yourself 🙂

Chocolate White Chocolate Chunk Cookies

1/2 lb unsalted butter
1 c. light brown sugar
1 c. white sugar
2 t. pure vanilla extract
2 eggs (from chickens!)
2/3 c. unsweetened cocoa
2 1/2 c. all-purpose flour
1 t. baking soda
1 t. kosher salt
1 1/2 lb white choc. chips/chunks

This recipe is mainly the same as the original but there are just a couple things I want to point out that I do differently after making them so long. It may have to do with being in Colorado but they always flatten (still taste just as good). I have added a half cup of flour to the existing two cups so that they come out as more beautiful fluffy cookies 🙂

Start by creaming the butter and sugars. Add the vanilla, then eggs, one at a time. Add cocoa and mix again. The batter MUST be tasted at this point 🙂

Sift together flour, baking soda and salt. I have to be honest…I am a lazy baker when it comes to recipes I know. I don’t always sift my flour. I don’t always measure the exact salt (but ALWAYS measure baking soda). Needless to say, the cookies always turn out amazing!

Fold white chocolate chips into batter. I will sometimes throw in semi-sweet chocolate chips as well (not that it needs more chocolate!). It’s more like if I don’t have enough white chocolate on hand I will do a combination.


Drop dough onto a baking sheet and place in oven. Here comes the IMPORTANT part (don’t stop reading). I am always suprised at the success of these cookies…you must check them within 10 minutes (typically they are just about done) and I am the type of person to try and do a couple tasks in those 10 minutes and often I forget about them!

Luckily, I have been saved multiple times and remembered at the last second…of course I have also left them too long 🙁 So don’t go far from the kitchen. These cookies are done as soon as there appears to be no “wet”dough. They will look undone but I promise you want to pull them out.

As soon as they are out of the oven, allow them to cool for a few minutes on the cookie sheet and then they can be transfered to a cooling rack. Best eaten the day of but I don’t suggest you eat the whole batch! 🙂 These are always a hit when I take them to work and parties.

And I am especially happy to find this post, because when my husband and I were first courting, I made him cookies very similar to these, then proceeded to lose the recipe. I’ve always wanted to re-create them for an anniversary, and now I can! Yum and yay!

    • Awww I am so glad! I hate when that happens though…you have a recipe you like and then forget which cookbook or just lose it because it was written on some scrap piece of paper. I am happy you can make these again! 🙂
