Summer, Salmon, & Yoga

Salmon is always one of my favorite things to eat/make in the summer. It is so light and healthy and goes good with salad, pasta, rice and veggies. This dish (and most all my meals) was sparked by the food in my fridge! Well, I didn’t just have the salmon lying around but I got it on sale at Whole Foods and then wanted to make it into a meal with the contents of my fridge.

Arugula, spinach and broccoli (lots of greens!) were overflowing my fridge and needed to be used up sooner than later…

I try to do Yoga as often as possible…it such a great work out of both the mind and body. I love how it makes me feel and then I want to eat something healthy…like salmon on a bed of arugula 😉

Before yoga, I seasoned the salmon with dill, lemon juice, salt and pepper.

The broccoli was cut, washed, and ready to be steamed when I returned…it was a late class so I prepped the meal before hand. I also made some brown rice to go with the steamed broccoli…this isn’t necessary but good if you want a little more substance.

After cooking the salmon (which doesn’t take long) I laid it over a bed of arugula and spinach with tomatoes!
