Tried and True: Banana Bread

Warm banana bread…fresh out of the oven topped with cream cheese is a breakfast treat 😀

This banana bread recipe is nothing new and innovative but it is one of my favorite breads to bake…and the excess amount of frozen bananas lead me to make banana bread…


Simple and quick recipes gain my attention the most and banana bread is just that. This recipe is easy to whip up and it delivers a delicious delight!

~Banana Bread Recipe~
Gluten-free, Dairy-free (if desired)

Sugar and all those dried goods!


Dry Ingredients:

  • 1 c. brown rice flour
  • 3/4 c. any kind of flour
  • 3/4 c. brown sugar
  • 1/4 c. cornmeal
  • 2 T starch (corn or tapioca)
  • 1 t. cinnamon
  • 1/2 t. nutmeg
  • 1/2 t. salt
  • 1/2 t. baking soda
  • 1 t. baking powder

Bananas and other wet ingredients


Wet Ingredients:

  • 3 bananas, thawed
  • 2 eggs
  • honey
  • 1/2 c. milk (coconut milk, preference)
Making the Goods

1. Preheat the oven to 350 degrees
2. Blend all the wet ingredients
3. Combine all the dry ingredients and then add them to the mixture above.
4. Scrape the mixture into a bread pan and place in oven.
5. Bake the banana bread for 30-45 minutes. The best way to check if it is done is to stick a toothpick or knife in the center. If it is clean then the banana bread is good to go 🙂

A little more:

This recipe is easily made gluten-free by substituting any gluten-free flour and it tastes just as great. Since I do eat gluten I typically use whole wheat flour but regular all-purpose flour is fine too.

Milk or buttermilk can be used in this recipe but even though I eat dairy I prefer the coconut milk 🙂

  6. Banana bread is one of my faves! I’ve never topped a slice with cream cheese though…sounds interesting! Vince usually puts some sour cream in his banana bread recipe to make it fluffy. We like to make french toast sometimes with our banana bread….you should try it!

    • It is so tasty with cream cheese! yum! My favorite 🙂 And ya sour cream can work well too…I was totally going to post about making it into french toast lol. It is so yummy!!

      • I have snipped your recipe out of your post and will be trying it sometime in the future. I don’t have a lot of recipes to try but that’s one of them. If I could learn to make good banana bread I’d make it on a regular basis.
