Grande Margaritas

Birthdays come every year but they always seems to sneak up on you πŸ™‚

Summers are always so jammed pack with activities…so many birthdays have been spent away from home.

This year there were no big plans…it was a Tuesday birthday so even more difficult to plan much.

All I wanted was to spend time with the ones I love but I don’t need a birthday for that πŸ™‚

However, I guess the birthday gave me a good reason to go out to the Rio for some margaritas πŸ˜€

The Rio Grande is a Mexican restaurant that is currently only in Colorado (6 locations)…they have some good food but people go there for the margaritas πŸ˜€

There isn’t a three margarita limit for no reason! They call it “good things come in threes.”

Chicken Quesadilla

Some of my favorites are the smoked chicken tacos, grilled steak tacos, guacamole tostada, chicken quesadilla or a smothered burrito.

Tacos

The smoked chicken tacos are flavored with a chipolte lime sauce while the grilled steak tacos are topped with an ancho pepper sauce and corn salsa. The guacamole tostada is a very fresh and tasty choice.

    • Oh awesome! Ya, let me know what you think if you go there. The Denver location has a great patio and outside bar they just opened…makes the waiting for a table not so bad πŸ™‚

Coincidentally, my best friend said to me today, “Cara, you’re turning 30 in a month, we should do something to celebrate.” In my head, I was thinking, “Birthdays are awful; especially when they show signs of being tremendously wonderful.” The pictures above, however, depict an evening I wouldn’t mind partaking in. Those quesadillas are making drool quite frankly, and it’s not often I hanker for a margarita, but that one looks delicious.
