These chunky, chewy, delicious cookies will absolutely bring cheer to friends, family, co-workers, and any celebration. They are simple cookies full of yummy flavor and are especially perfect for the holiday season with hints of cinnamon, nutmeg, cloves, and molasses 😀
I came across this recipe on the Alaskan Beer website. The recipe called for their stout but I decided to use Rogue’s Shakespeare Oatmeal Stout. It seemed fitting for oatmeal cookies 🙂
These cookies are quite amazing! Maybe I should not be so surprised but I was very pleased at how well they turned out. The recipe does not call for reducing the beer but this gives the cookies more flavor from the beer (note: they don’t actually taste like beer).
The first time I followed the recipe exactly and they came out flat and a little crispy 🙁 I altered the flour and made them smaller (did not want them to spread much). That did the trick! To provide the perfect recipe for you, I HAD to make the full batch again with the right flour amount and with a slight beer alteration. That made them absolutely addictive 😉
Oatmeal Stout Cookies
~Adapted from Alaskan Beer recipes
1/2 lb butter
2/3 c sugar
2/3 c brown sugar
1 egg
1 T molasses
2 T oatmeal stout (reduced from roughly 6 oz)
1 tsp vanilla (optional)
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/2 tsp baking soda
1/2 tsp baking powder
2 1/2 c flour
2 c oatmeal
1 c chocolate chips
3/4 c walnuts (optional)
Notes
The reduced beer is almost a replacement for the vanilla so it is not necessary to include but can be included.
If possible, it is best for the beer to lose its carbonation. Measure out what you need to make the cookies and set that aside or in the fridge to bake with another day, while you enjoy the rest of the beer 🙂
Directions:
- Reduce beer in a pot on the stove. Try on low-medium and if you are feeling risky, medium, but do not go far! Beer likes to boil over. This will take at least 10 minutes but maybe more if the stove is kept on low. This is partly a rough measurement but you can pour into a measuring glass as soon as you think it is close to 2 T. (I let it cool a bit before adding to other ingredients)
- In a large mixing bowl with an electric mixer, cream butter and sugars. Add egg, molasses, beer, and vanilla.
- In a separate bowl, combine salt, spices, baking soda and powder, oatmeal, and flour. Slowly add dry ingredients to wet ingredients with the mixer on slow.
- Mix until just combined. Add chocolate chips and walnuts if desired.
- Drop cookies on a cookie sheet- I like to keep these ones small so they are like mini chunky cookies 🙂
- Bake cookies at 350 degrees Fahrenheit for 6-8 minutes (depending on size of cookies).

Oh good, glad to hear! Enjoy! 🙂
THESE LOOK LIKE MY IDEAL COOKIES!!! Thick and chewy = yum. I’ve been searching for the perfect cookie for the virtual cookie swap and these are definitely going on the list of potentials!! 🙂
Hi Erika, thanks so much! I’m glad you like! 🙂
These look terrific. I like the stout addition to a cookie very much. I think I am inspired to play around a bit with this maybe with a cake. Great post.
Yay, I’m glad 🙂 I love putting beer in my cakes! Let me know how it goes!
These look incredible Lilly Sue! Thick, chewy cookie deliciousness. Love the fact that you reduced the beer first… I reckon I could use ‘beer extract’ in all sorts of recipes! Definitely trying this recipe soon. Yum! x
Thanks Laura! Yes, I am starting to put beer extract in a lot of things, lol! Enjoy 🙂
These look great! I wonder how this recipe would do with a chocolate stout. Or you could get kooky and maybe do a chili pepper stout (assuming you could find one), give it a bit of a zing!
A chocolate stout would be great too- pretty much most stouts would be pretty delicious in these cookies. I don’t think I would like a chili pepper beer in my oatmeal cookies but definitely in a more strictly chocolate cookies or cake. I have made Mexican Chocolate stout cookies that definitely have a little burn on the back end. Yum! Thanks!
