Some of you are probably starting to think I am a “little” obsessed with pumpkin…pumpkin cookies, pumpkin beer, pumpkin bread…OK, I might be a little obsessed š
Fall time is all about pumpkin and then after Thanksgiving and ALL the leftovers, then I might be pumpkin’d out š
While I was browsing food blogs I came across this Smoked Gouda and Pumpkin Mac and Cheese recipe. I absolutely had to try it!
Mac and Cheese is already a favorite food of mine…it is the ultimate comfort food. Adding smoked gouda and pumpkin makes it heaven š
Smoked gouda pairs well with bock beers. Bock beers are dark lagers with a rich malty taste that compliments the nutty, smooth flavor of smoked gouda.
For this meal I chose the Ayinger Celebrator or doppelbock. It had a deep malty aroma and rich, dark flavor (not to mention the goat necklaces!). Bock beers are great because they have dark tones but have a lager backbone which makes them not as heavy as stouts and porters.
The Ayinger Celebrator was a great compliment to the Pumpkin Mac and Cheese. To find the recipe visit confessions of a chocoholic. I followed the recipe almost completely. I just used shell pasta (Annie’s mac and cheese got me hooked) instead of elbow macaroni and I added some cherry tomatoes š

Designer beers with little goat bobbles to go along with my mac and cheese is a diners dream. If each goat had a different pose, that would be perfect, so I know which beer is mine.

I love beer too! I’m much older than you and most people my age prefer wine. With the exception of one of my girlfriends. Live in Seattle and love all the little microbrews floating around. This recipe looks delish and love the beer pairing. š
I like wine as well but definitely a beer girl! š I find it difficult to find girls with a passion like mine…but I have a couple friends that love beer as much as I do, well maybe š
