As most of you know, at least if you watch football, the Broncos made it to the Super Bowl!!! This is a very exciting time, indeed! Though I love any reason to get together with friends to enjoy good food and delicious beer, this will be an even better time as we will all be rooting on the Broncos!
Chicken wings are always a great addition to a Super Bowl spread and this year I get to share with all of you the special Limoncello-Marinated Chicken Wing recipe from Racca’s Pizza. These wings have lots of flavor! I love ranch with my wings but these definitely do not need it!
Limoncello-Marinated Chicken Wings
~Recipe of Famous Chef Mark Dym from Racca’s Pizza
~Serves 5 to 6 (depending on how hungry you are)
Marinade:
3 whole organic lemons, quartered
1/2 cup limoncello
1/4 ounce fresh thyme (about 1/2 T.)
3 ounces fresh rosemary (about 6T)
1/4 ounce fresh oregano (about 1/2 T.)
2 tablespoons kosher salt
Pinch of crushed red pepper
1 1/2 cups extra virgin olive oil
5 pounds chicken wings
Nutritional information per serving: 674 cal., 66 g fat (9 g sat), 0 mg chol., 11 g carb., 1 g pro., 6 g fiber, 2322 mg sodium
Notes on ingredients:
Using organic lemons is important since you are using the whole lemon. Also, I only used about a tablespoon and a half of salt and I used less olive oil. This makes the marinade thicker which still worked fine but you may have to shake marinade off before cooking.
- Blend the quartered lemons, limoncello and rest of marinade ingredients in a food processor.
- Fully coat the chicken wings and marinate in the refrigerator for up to 24 hours.
- Remove from marinade, and bake or grill wings at 450 degrees until browned and cooked through, 20 to 30 minutes. Actual coal-fired oven preferred, but not required.
Notes on cooking:
I tried both baking and grilling. I prefer my wings grilled because I like the charred flavor but both methods are delicious! If using a gas grill, cook on low for about 10 minutes on each side. In the oven, it took longer due to some of the marinade juices remaining in the dish. To actually get some color you may need to remove any extra juices from the cooking dish.
Not feeling adventurous? Marco’s delivers within a three mile radius so that you can provide fresh pizza and wings for all your guests for the big game without lifting a finger! Some of my favorite pizza choices are: The Bronx, Pistacchio, and the Del Re but you CANNOT go wrong with any of their pizzas!
My two year old niece even loved the wings! She will be in her Broncos cheerleader outfit on Sunday! Go Broncos!!! 😀

The recipe looks delish! 🙂 Sorry I won’t be rooting on the Broncos though … 😉 hehehe! Gonna be a great game!
ha ha I guess I can forgive you 🙂 It will definitely be a great game! What are you making for the big day or are you going out to watch the game?
Bahaha! 🙂
I’m planning to make salmon sliders with sriracha mayo, and maybe a spinach-artichoke dip. I’ll be watching it with my brother and his wife and kids, so I’m sure we’ll have TONS of food and drink. So excited on all counts, lol!
Ooh, spinach-artichoke dip sounds like a swell idea!! I may need to add that to the menu!
Looooooove spinach-artichoke dip! I just use the Better Homes & Gardens plaid cookbook recipe. Super awesome and easy!
I do too!! My mom has a great recipe that I love but she also has that cookbook so I bet it’s a variation 🙂
It looks a wonderful marinade – really fresh and zingy. And what a sweet niece you’ve got! My 9 month old niece is staying at the moment – super cute and very noisy, hahaha 😉
It is a very fun marinade! Cute and noisy sounds about right! 🙂
YUM:) These wings sound delicious! Happy Day – thanks for sharing a great recipe.
You’re welcome! Thanks for stopping by and commenting!! Always love to see you here!
I hope your Bronco’s win, never in a million would I have thought to use limoncello to marinade wings, I can see how it would be good though. They sound really tasty!
I would not have either! lol They are really delicious though 🙂 Thanks!
Yeah, yeah, yeah….I live in Seattle and you can only imagine who I’ll be rooting for! 🙂 Your wings look really good Lilly Sue!
If I make these….I’m not sharing! 😛
ha ha, don’t! The cook can do whatever she likes with her food 🙂
I don’t follow football so I don’t have a horse in this race, Or rather, I didn’t but on your account, now I’ll vicariously root for the Broncos. Go Broncos!
Your niece is adorable! And oh my the chicken wings …
Yay! You are too sweet! 🙂 Thank you!!!
woo hoo and go Broncs 🙂 Looks like a good spread, Lilly Sue!
Thanks Liz!! These wings gave me an excuse to make homemade limoncello! 🙂
I know nothing of the Super Bowl but I know a lot about these delicious wings 😀
Cheers

We’re making these tomorrow – I think we’ll grill them. If we can find the grill under all the snow, that is. Thanks for sharing!
Lemon wings sound like such an amazing change from the standard BBQ variety! They look absolutely amazing!
Thanks Jenny! They are a bit different- I am not a fan of regular BBQ wings typically.
What a great chicken wing recipe! These sound amazing. Sorry about your Broncos, though…what a terrible game.
I know!! It was very tragic and depressing…apparently they decided to not play. Thanks!
At least you can relish the fact that they’ve won the game at one point, which is more than I can say for the Vikings, which is who I root for. (key the violins……)
Ya, they had a really good season so that is good but it definitely did not seem evident in the Super bowl game…
Such a lovely marinade!
Thanks Anjana!! These will be great with the weather warm again- so delicious!
