Super Bowl and Limoncello Marinated Chicken Wings!

As most of you know, at least if you watch football, the Broncos made it to the Super Bowl!!! This is a very exciting time, indeed! Though I love any reason to get together with friends to enjoy good food and delicious beer, this will be an even better time as we will all be rooting on the Broncos!

Chicken wings are always a great addition to a Super Bowl spread and this year I get to share with all of you the special Limoncello-Marinated Chicken Wing recipe from Racca’s Pizza. These wings have lots of flavor! I love ranch with my wings but these definitely do not need it!

Limoncello

Limoncello-Marinated Chicken Wings
~Recipe of Famous Chef Mark Dym from Racca’s Pizza
~Serves 5 to 6 (depending on how hungry you are)

Marinade:
3 whole organic lemons, quartered
1/2 cup limoncello
1/4 ounce fresh thyme (about 1/2 T.)
3 ounces fresh rosemary (about 6T)
1/4 ounce fresh oregano (about 1/2 T.)
2 tablespoons kosher salt
Pinch of crushed red pepper
1 1/2 cups extra virgin olive oil

5 pounds chicken wings

Nutritional information per serving: 674 cal., 66 g fat (9 g sat), 0 mg chol., 11 g carb., 1 g pro., 6 g fiber, 2322 mg sodium

Notes on ingredients:

Using organic lemons is important since you are using the whole lemon. Also, I only used about a tablespoon and a half of salt and I used less olive oil. This makes the marinade thicker which still worked fine but you may have to shake marinade off before cooking.

Limoncello

  • Blend the quartered lemons, limoncello and rest of marinade ingredients in a food processor.
  • Fully coat the chicken wings and marinate in the refrigerator for up to 24 hours.
  • Remove from marinade, and bake or grill wings at 450 degrees until browned and cooked through, 20 to 30 minutes. Actual coal-fired oven preferred, but not required.

Notes on cooking:

I tried both baking and grilling. I prefer my wings grilled because I like the charred flavor but both methods are delicious! If using a gas grill, cook on low for about 10 minutes on each side. In the oven, it took longer due to some of the marinade juices remaining in the dish. To actually get some color you may need to remove any extra juices from the cooking dish.
