Brunch at Humboldt Denver

Summer is here and there is no better way to spend a Sunday morning/afternoon than going to brunch! I love enjoying bloody mary’s and other fun cocktails on a nice patio while waiting for yummy breakfast to arrive ๐Ÿ™‚ Some breakfast places try to get you in and out but I like more of the leisure brunch spot and Humboldt is just that!

Humboldt has a beautiful space on the corner of 17th and Humboldt in uptown. Walking in, I was torn between wanting to sit out on the patio and wanting to sit inside this beautiful restaurant. Luckily, I did not have to decide and we ended up with something even better. There is this hidden jewel of a room in the back that combines beauty and sunlight. A narrow room with brick walls and a transparent rooftop letting sunlight in made this a very romantic setting. Lights were strewn across the ceiling making it evident that a night time setting would be even more romantic!

We started out with the Bloody Maria and the Bloody Bay. The Bloody Maria is made with tequila, bloody mix, peppers, pickles and OJ. Then cucumber gin, bloody mix, old bay, and an oyster on the half encompass the Bloody Bay. These were two different tasting bloody choices. The cucumber gin was a great touch to the drink; It really came through and was very delicious. Neither of the bloody Marys were as extravagant as some but I enjoyed them for their simplicity ๐Ÿ™‚

The steak tartare and smoked trout, recommendation of the GM, were our starting bites. The steak tartare comes topped with crispy oyster, pea shoots, and caper berries with smoked oyster aioli and crunchy bread on the side. It was a very unique dish and delicious but hard to compare when put up against the smoked trout dip. This dip was phenomenal!!! It was topped with a sweet onion jam and came with house made chips. I could eat way too much of it.

While we waited for the main entrees we ordered another round of cocktails: the King of Montenegro and the Cucumber Gimlet. These are two very different cocktails but both very delicious. The King of Montenegro, recommended by the server, was made up of W.L. Wellers bourbon, amaro, lemon, house made grenadine, and ginger beer. It was a unique whiskey cocktail that I enjoyed very much. The Cucumber Gimlet, on the other hand, was a refreshing cucumber vodka cocktail with fresh lime juice and sugar.

Though it was a very tough choice, we chose the Pain Perdu and the Salmon Benedict for our breakfast entrees. The Salmon Benedict was house-smoked salmon with a poached farm egg and hollandaise sauce on top of a Wolfermans English muffin. It was good but nothing special. The Humboldt breakfast potatoes were very well done though!

The Pain Perdu (first photo) was a delicious combination of sweet and savory. Confit pork belly, sunny side eggs, arugula, cider shallot gastrique (caramelized sugar, deglazed with vinegar) on a Red Mountain brioche completed this dish. I loved the combination of flavors and how the runny egg yolks soaked into the whole meal ๐Ÿ™‚ It was so yummy!

After enjoying our food we headed out to the patio to enjoy the warm weather- we got the best of both worlds! At this point, I was ready to check out their beer menu. Humboldt does not have any draft beers but they have a large selection of canned and bottled craft beer. Wanting something light, I went with the Upslope Lager. I love it’s nutty flavor and light body. Overall, we had a great time at Humboldt with wonderful service!

  8. Wow… that pork belly looks like my man’s breakfast from heaven! I love brunch as well. It’s that perfect excuse to get all the yummy breakfast stuff you wanted, but you get to eat more and don’t have to get up early ๐Ÿ˜‰ win-win!
