Chipotle Chicken

There are a lot of chipotle chicken recipes out there but this has got to be one of the best! This chipotle chicken is cooked perfectly with lots of flavor and spice! My boyfriend and I love going to happy hour (only at some locations) at Chipotle for 2-for-1 margaritas and chips and salsa with your food order. The margaritas are surprisingly really tasty and amazing after a nice long day. The burrito bowl or the burrito are so huge and nice when you are just starving beyond belief (and even if you’re not, they are good the next day πŸ™‚ ).

My boyfriend has been talking about replicating their chicken for quite some time and finally came around to doing it. It is not just the flavor of the chicken but how succulent it is when bitten into. He researched many difference recipes and finally settled on one that he tested and adapted multiple times.

Though I am not celebrating Labor Day Weekend (as I am currently in Spain), I thought this would be a good recipe to share for this U.S holiday weekend. Even though this is grilled we made it all through the winter. It is worth the quick jaunt outside in the snow to grill this chicken πŸ™‚ This is a much spicier version and actually Chipotle released their recipe here if interested.

Chipotle Chicken
~Recipe adapted from Life of a Mompreneur

1 7 oz can of chipotle pepper in adobo sauce
6-7 dried red chili peppers
1 small onion
2 t cumin
2 T dried oregano
2.5 t salt
1 t black pepper
6 chicken breasts, cut into bite size pieces
1/4 c olive oil (optional – I usually don’t put this in)
1 c water

Note: The oil is really not necessary and eliminating it makes this healthier! πŸ™‚

Instructions:

  • Throw all but the chicken into the blender and blend well.
  • Add sauce and chicken to dish or Tupperware of your choice, and let marinate overnight.
  • The next day: Grill 10 minutes each side on low heat (or until cooked thoroughly but not dry) and serve alongside whatever you like.

We usually make it into a rice bowl with brown rice, avocado, and possibly black beans and cheddar cheese. Green tabasco is also yummy on it! It is not that it needs more flavor but we may have a minor addiction to green tabasco πŸ˜€ Another idea for this chicken is to make it into a taco salad!

Pair with a beer that has a little strength- a pale ale or mellow IPA will keep up with the spicy chicken πŸ™‚

It is bad writing this post while thousands of miles away from the states! Now, I am craving this chicken or a nice Chipotle burrito! πŸ™‚ Well, I am enjoying myself (currently in Sitges, Spain) and this meal will taste all the better in a few months! πŸ˜€ Travel posts coming soon!

    • Ha ha πŸ™‚ 1. Check around- it is probably only going to be at a highly busy one but also I guess so e ones in Denver that don’t do HH were doing a Thursday special at least- but maybe only in the summer
