A night full of exquisite food, off the radar Mexican dishes, divine dessert treats, and tasty cocktails was enjoyed by all. Whether it was the pig ear nachos, lamb neck taco, mushroom toast or red velvet cheesecake, everyone seemed satisfied.
Los Chingones, meaning bad ass, opened in the RiNo Art District on Wednesday. Troy Guard, owner of all the TAG restaurants, opened Los Chingones as well as Sugarmill, which is right next door. The sneak preview private party was an introduction to Los Chingones and Sugarmill that featured delicious menu items from both places.
When walking into Los Chingones, the buzzing atmosphere and beautifully large painted wall were the first things to capture my attention. Then, the open kitchen with chefs hard at work preparing tasty dishes was on display for all.
Heading upstairs leads you to another bar and a large open patio. The weather has dropped quite a bit here so the guests observed from inside but in the summer the patio will be hoppin’ for sure.
Before diving into the food, a cocktail must be in hand. The pomegranate caipirinha started the night off right. The drink was a delicious concoction of leblon cachaca rum, POM pomegranate, blueberry juice, and lime. It was a most impressive drink, especially since after reading the ingredients, I presumed it would be too sweet. The other cocktail that was very enjoyable was the T & T that had tequila, lime, TANG, and orange soda.
Hungry yet? Everything tasted good and I mean I tasted almost everything π We started out with some garden guac that was packed with pumpkin seeds, tomato, corn and zucchini. There was also an array of salsas out for tasting; I really liked the salsa verde.
The pig ear nachos stopped me in my tracks. Pig ear and chorizo with pinto bean dip and pickled jalapenos made outstanding nachos. Los Chingones has a wide variety of tacos. We tried most of them and the lamb neck, butternut squash, and beef tongue tacos were our favorites but honestly it was hard choosing when they were all very good π
Los Chingones is definitely a place to visit more than once. All the food was great and the atmosphere was fun. I will be back in very soon to get another taste of those nachos!
Due to the amazing food from both, Sugarmill will get a separate review but here is a little tease for what is to come…

This looks delicious and amazing. I love Mexican food, and these twists on it make it even more enticing! Your review is fabulous as always. (My tummy is growling and I just ate!)
Mexican is definitely my favorite so I love when there is some creativity involved in the regular dishes. Of course, I will always love traditional π Sorry, to make you hungry! π
fun! Seems a bit ahead of the trends with the TANG–crazy. And the Caipirinha seems to be on the rise π And that food looks gooooooood.
Liz, you would have loved the Caipirinha! At least, I am pretty sure since you love craft cocktails π I thought the TANG was a funny addition to the cocktail but it was good.
Whoa! This place sounds delicious. Going on must-try Denver restaurant list. π
I think you will really like it! I keep thinking about the nachos- need to get back π
